Preparation

Prepare the Gremolata

In a bowl, combine toasted hazelnuts, minced garlic, lemon zest, and chopped parsley. Mix well and set aside.

Prepare the Butter

In a small saucepan, melt the unsalted butter over low heat. Add lemon juice and chopped chives. Stir until well combined and set aside.

Roast the Vegetables

Preheat the oven to 425°F (220°C). Toss the halved radishes, shishito peppers, and edamame beans with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for about 15-20 minutes or until tender and slightly charred.

Roast the Halibut

Season the halibut fillets with salt and black pepper. In the last 10 minutes of roasting the vegetables, add the halibut fillets to the baking sheet. Roast until the fish is opaque and flakes easily, about 10-12 minutes.

Plating

Serve

On a plate, arrange the roasted vegetables, place the halibut on top, and drizzle with the chive and lemon butter. Finish with a generous sprinkle of the hazelnut gremolata and garnish with heirloom tomatoes.
