Prepare the Sweet Potatoes

Peel and dice the sweet potatoes into small cubes. Set aside.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chorizo and cook until browned, about 5-7 minutes. Remove the chorizo from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they start to soften. Add chopped red bell pepper, garlic (minced), and corn. Cook for another 5 minutes.
