Prepare the Sweet Potatoes
Peel and dice the sweet potatoes into small cubes. Set aside.
Cook the Chorizo
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chorizo and cook until browned, about 5-7 minutes. Remove the chorizo from the skillet and set aside.
Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they start to soften. Add chopped red bell pepper, garlic (minced), and corn. Cook for another 5 minutes.
Combine Ingredients
Return the cooked chorizo to the skillet. Season with salt, black pepper, and paprika. Stir well to combine and cook for an additional 3-4 minutes.
Finish and Serve
Remove the skillet from heat and stir in chopped green onions and cilantro. Serve warm.
