Cooking the Pork Chop

Prepare the Pork Chop
Preheat a skillet over medium-high heat. Season the Tomahawk pork chop with salt and pepper. Wrap the pork chop with prosciutto slices, ensuring it is fully covered.

Sear the Pork Chop
Add the wrapped pork chop to the skillet and sear for about 4-5 minutes on each side until it develops a golden-brown crust. Transfer the pork chop to the oven and roast at 180°C (350°F) for 10-15 minutes or until the internal temperature reaches 145°F (63°C).

Making Truffle Chive Whipped Potato

Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter, heavy cream, truffle oil, salt, and pepper. Mash until creamy and smooth.

Finish with Chives
Fold in the chopped chives and mix well. Adjust seasoning to taste.
Plating

Plate the Dish
Slice the pork chop and arrange it on a plate. Add a scoop of truffle chive whipped potato, sautéed mushrooms, and Chef’s vegetables. Drizzle the veal demi-glace sauce over the pork chop and serve immediately.
