    Prepare the Ingredients

    Clean and slice the foraged mushrooms. If using frozen peas, thaw them. Pat the scallops dry with paper towels and season with salt and black pepper.

    Make the Bonito Butter

    In a small saucepan, melt the butter over low heat. Add the bonito flakes and stir gently. Allow it to infuse for about 5 minutes, then strain the butter to remove the flakes, keeping only the infused butter.

    Sear the Scallops

    Heat the olive oil in a large skillet over medium-high heat. Once hot, add the scallops in a single layer. Sear for about 2-3 minutes on each side until they are golden brown and cooked through. Remove from the skillet and set aside.

    Cook the Mushrooms and Peas

    In the same skillet, add the sliced mushrooms and cook for about 4-5 minutes until they are tender. Add the green peas and cook for an additional 2 minutes. Season with salt and pepper to taste.

    Plate the Dish

    On a serving plate, arrange the sautéed mushrooms and peas. Top with the seared scallops and drizzle with the bonito butter for an umami-rich finish.
