    Sauté Vegetables

    In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, celery, and garlic. Sauté until softened, about 5 minutes.

    Add Potatoes

    Stir in the diced potatoes and cook for another 3 minutes.

    Add Stock and Seasonings

    Pour in the fish stock and add the dried thyme, bay leaves, salt, and pepper. Bring to a simmer and cook until potatoes are tender, about 15 minutes.

    Add Seafood

    Add the halibut, scallops, and shrimp to the pot. Cook for an additional 5-7 minutes until the seafood is cooked through.

    Finish with Cream

    Reduce heat to low and stir in the heavy cream. Simmer for another 5 minutes without boiling.

    Garnish and Serve

    Remove bay leaves, stir in fresh parsley, and adjust seasoning if needed. Serve warm.
