Preparation of Confit Garlic Dressing

    Prepare the Garlic

    In a small pot, combine garlic cloves and olive oil. Simmer on low heat for about 30 minutes until the garlic is soft and fragrant. Remove from heat and let it cool slightly.

    Blend the Dressing

    Once cooled, transfer the garlic and oil to a blender. Add lemon juice, salt, and black pepper. Blend until smooth and creamy. Set aside.

Roasting the Romaine

    Prepare the Romaine

    Preheat your grill or oven to medium-high heat. Cut the romaine heads in half lengthwise and drizzle with olive oil. Season with salt and pepper.

    Grill the Romaine

    Place the romaine halves cut-side down on the grill or in the oven. Grill for about 3-4 minutes until slightly charred and wilted.

Serving

    Plate the Dish

    On a serving plate, place the grilled romaine. Top with slices of house-cured pork belly, croutons, and a generous drizzle of confit garlic dressing. Finish with a sprinkle of Grana Padano and a dollop of chorizo jam.
