Prepare Pickled Onion

    Pickle the Onions

    In a small pot, combine apple cider vinegar, water, sugar, and salt. Bring to a boil. Thinly slice the red onion and add to the pot. Remove from heat and let it cool. Transfer to a jar and refrigerate for at least 30 minutes.

Make Hummus

    Blend the Hummus

    In a food processor, combine cooked beets, chickpeas, tahini, garlic, lemon juice, olive oil, salt, and cumin. Blend until smooth and creamy. Adjust seasoning to taste.

Prepare Taro Chips

    Bake Taro Chips

    Preheat the oven to 400°F (200°C). Peel and thinly slice the taro root. Toss with olive oil and salt. Spread the slices on a baking sheet in a single layer. Bake for 20-25 minutes, flipping halfway, until crispy.

Assemble the Dish

    Serve

    Spread the beet hummus on a serving plate. Top with pickled onions. Serve with taro chips on the side, drizzled with a little olive oil if desired.
