Prepare the Lamb
Preheat your oven to 400°F (200°C). Pat the rack of lamb dry with paper towels and place it in a roasting pan.

Season the Lamb
In a small bowl, mix together olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the lamb, making sure to cover it evenly.

Roast the Lamb
Place the lamb in the preheated oven and roast for about 25-30 minutes for medium rare, or until it reaches your desired doneness. Use a meat thermometer to check the internal temperature; it should be 135°F (57°C) for medium rare.

Rest the Lamb
Remove the lamb from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute throughout the meat.

Slice the rack into individual chops and serve with red wine, if desired.
