Cooking Lobster

    Prepare the Lobster

    In a large pot, bring water and salt to a boil. Add the lobster and cover. Boil for about 8-10 minutes until the lobster is bright red and cooked through. Remove from pot and let cool slightly before cracking.

Confit Baby Potatoes

    Cook the Potatoes

    In a saucepan, combine baby potatoes, olive oil, garlic, thyme, salt, and pepper. Cook over low heat until potatoes are tender, about 30-40 minutes. Remove from heat and set aside.

Cheddar Biscuit

    Make the Biscuit Dough

    Preheat oven to 425°F (220°C). In a bowl, mix flour, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Stir in cheddar cheese. Add milk and mix until just combined. Drop spoonfuls onto a baking sheet and bake for 15-20 minutes until golden.

Remoulade

    Prepare the Remoulade

    In a bowl, whisk together scallion, celery root, mayonnaise, lemon juice, Dijon mustard, salt, and pepper until well combined. Chill in the refrigerator until ready to serve.

Drawn Butter

    Melt the Butter

    In a small saucepan, melt unsalted butter over low heat until just warm. Keep warm until serving.
