Method
Prepare the Roulade

Prepare the Lamb
Preheat the oven to 180°C (350°F). Lay the lamb saddle flat on a clean surface. Spread the basil pesto evenly over the meat, leaving a small border around the edges.

Add Filling
Sprinkle the crumbled feta cheese over the pesto-covered lamb. Carefully roll the lamb up tightly, starting from one end, and secure it with kitchen twine.

Sear and Roast
Heat a skillet over medium-high heat with a bit of oil. Sear the roulade on all sides until browned. Transfer to the oven and roast for about 25-30 minutes or until it reaches an internal temperature of 60°C (140°F) for medium-rare.
