    Prepare the Steak

    Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes. This helps ensure even cooking.

    Season the Steak

    Pat the steak dry with paper towels. Season both sides generously with salt and black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Cook the Steak

    Add the filet mignon to the hot skillet. Sear for about 4-5 minutes on one side, until a golden-brown crust forms.

    Flip the steak and add the butter and fresh rosemary or thyme to the skillet. Cook for an additional 4-5 minutes for medium-rare, basting the steak with the melted butter.
