Prepare the Cheesecake
Preheat the oven to 325°F (160°C). In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the sugar and mix until well combined. Add in the sour cream, vanilla extract, and lemon juice, mixing until incorporated. Beat in the eggs one at a time, followed by the flour. Pour the mixture into a greased 9-inch springform pan and bake for 50-60 minutes or until the center is set. Allow to cool and refrigerate for at least 4 hours.
Chai Tea Syrup
Make the Chai Tea Syrup
In a saucepan, combine water and sugar. Bring to a simmer over medium heat, stirring until the sugar dissolves. Add the chai tea bags, cinnamon, ginger, and cardamom. Allow to steep for 15 minutes, then remove the tea bags and simmer for an additional 10 minutes until slightly thickened. Let cool and store in the refrigerator.
Shortbread
Prepare the Shortbread
In a bowl, cream the butter and confectioners' sugar until light and fluffy. Gradually mix in the flour, salt, and vanilla extract until a dough forms. Roll out the dough and cut into desired shapes. Place on a baking sheet and bake at 350°F (175°C) for 15-20 minutes or until the edges are lightly golden. Allow to cool.
Assembly
Assemble the Dish
Slice the chilled cheesecake and serve on a plate. Drizzle with chai tea syrup, add a few shortbread pieces on the side, and top with fresh blackberries.
