Method

Prepare the Tenderloin

    Season the Steak

    Season the AAA beef tenderloin with salt and black pepper on both sides.

    Sear the Steak

    In a skillet, heat olive oil over medium-high heat. Add the tenderloin and sear for 3-4 minutes on each side for medium-rare, or until desired doneness is achieved.

    Rest the Steak

    Remove the tenderloin from the skillet and let it rest for 5 minutes before slicing.

Prepare the Whipped Potatoes

    Cook the Potatoes

    Peel and chop the potatoes. Boil in salted water until tender, about 15-20 minutes. Drain.

    Whip the Potatoes

    Add butter and heavy cream to the drained potatoes and mash until smooth. Season with salt to taste.

Prepare the Chef's Vegetables

    Sauté the Vegetables

    In a separate skillet, heat olive oil over medium heat. Add the carrots, broccoli, and zucchini. Season with salt and black pepper, and sauté for about 5-7 minutes until tender.

Serve the Dish

    Slice the rested tenderloin and arrange it on a plate. Add a serving of whipped potatoes and sautéed vegetables on the side.

    Serve with a side of veal jus or béarnaise sauce for drizzling over the steak.
