Method

Cooking the Steak

  1. 1

    Season the Rib Eye

Generously season the rib eye steak with salt and pepper on both sides. Let it sit at room temperature for about 30 minutes.

  2. 2

    Sear the Steak

Preheat a skillet or grill over high heat. Add a little oil and sear the rib eye for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.

Preparing the Whipped Potatoes

  1. 3

    Cook the Potatoes

Peel and cut the potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes. Drain well.

  2. 4

    Whip the Potatoes

In a mixing bowl, combine the drained potatoes, butter, heavy cream, salt, and pepper. Whip until smooth and fluffy.

Cooking the Vegetables

  1. 5

    Sauté the Vegetables

In a separate pan, sauté the assorted vegetables in a bit of oil over medium heat until tender, about 5-7 minutes.

Serving

  1. 6

    Plate the Dish

On a plate, add a generous scoop of whipped potatoes, the sautéed vegetables, and the sliced rib eye steak. Drizzle with veal jus or béarnaise sauce to finish.
