    Prepare the reduction

    In a small saucepan, combine the white wine vinegar, dry white wine, shallots, and half of the tarragon leaves. Bring to a simmer over medium heat and let it reduce until it is about 2 tablespoons of liquid remaining. Strain the liquid and set aside.

    Melt the butter

    In another small saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and let it cool slightly.

    Whisk the yolks

    In a heatproof bowl, whisk the egg yolks until they are pale and thick. Gradually add the strained reduction while whisking continuously.

    Cook over heat

    Place the bowl over a pot of simmering water (double boiler method) and continue whisking until the mixture thickens and doubles in volume.

    Incorporate butter

    Slowly drizzle in the melted butter while whisking constantly until the sauce is creamy and thick. Be careful not to add the milk solids at the bottom of the melted butter.

    Add the remaining tarragon, salt, and white pepper to taste. Mix well.
