Prepare the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

Sauté Aromatics

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add Wine and Herbs

Pour in the white wine and bring to a simmer. Add the fresh parsley, thyme, salt, and black pepper. Let it cook for about 2-3 minutes to allow the flavors to meld.

Cook the Mussels

Add the cleaned mussels to the pot. Cover with a lid and cook for about 5-7 minutes, or until the mussels have opened up. Discard any mussels that remain closed.

Serve

Remove from heat and serve immediately, spooning the broth over the mussels. Optional: garnish with additional fresh herbs.
