Burger Preparation

Cook the Bacon
In a skillet, cook the bacon until crispy. Remove from heat and drain on paper towels.

Grill the Beef Patties
Season the AAA Canadian beef patties with salt and pepper. Grill over medium-high heat for about 4-5 minutes on each side or until desired doneness. Add a slice of aged cheddar cheese on top of each patty in the last minute of cooking to melt.

Assemble the Burgers
On the bottom half of each bun, layer the beef patty with melted cheese, crispy bacon, caramelized onions, and a dollop of port preserve. Top with the other half of the bun.
Remoulade Preparation

Prepare the Remoulade
In a bowl, mix together mayonnaise, finely chopped scallions, grated celery root, and lemon juice until well combined. Set aside.

Prepare the Shoestring Frites
Cut the potatoes into thin shoestring fries. Rinse in cold water and pat dry. Deep fry in hot oil until golden brown and crispy. Drain on paper towels and season with sea salt.
