    Preparing the Steak

    Remove the ribeye steaks from the refrigerator and allow them to come to room temperature for about 30 minutes. Pat them dry with paper towels.

    Seasoning

    Generously season both sides of the steaks with kosher salt and freshly ground black pepper.

    Searing the Steak

    Heat a large cast-iron skillet over high heat and add olive oil. Once the oil is shimmering, place the steaks in the pan. Sear for 4-5 minutes on one side without moving them.

    Flipping and Basting

    Flip the steaks and add the butter, rosemary, and crushed garlic to the pan. Cook for another 4-5 minutes, basting the steaks with the melted butter using a spoon.

    Checking for Doneness

    Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130°F (54°C).

    Resting the Steaks

    Remove the steaks from the pan and let them rest on a cutting board for 5-10 minutes before slicing.

    Slice the steaks against the grain and serve immediately with your choice of sides.
