Oven-roasted Skuna Bay Salmon Recipe

    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash and scrub the fingerling potatoes and place them in a pot of salted water. Bring to a boil and cook for about 15 minutes until tender. Drain and gently smash each potato with a fork.

    Season the Salmon

    On a baking sheet, place the Skuna Bay salmon fillets. Drizzle with olive oil, lemon juice, salt, and black pepper. Arrange the seasonal vegetables around the salmon.

    Roast in the Oven

    Place the baking sheet in the preheated oven and roast for 12-15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.

    Finish the Potatoes

    While the salmon is roasting, toss the smashed fingerling potatoes with olive oil, salt, and pepper. Spread them on a separate baking sheet and roast in the oven for the last 10 minutes of the salmon cooking time.

    Serve

    Remove the salmon and vegetables from the oven. Plate the salmon with the roasted seasonal vegetables and smashed fingerling potatoes. Serve with tartar sauce on the side.
