    Chop the dark chocolate into small pieces and place it in a heatproof bowl. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for 1-2 minutes to soften the chocolate.

    Mix the Ingredients

    Add the vanilla extract and a pinch of salt to the chocolate and cream mixture. Stir gently with a spatula until the chocolate is completely melted and the mixture is smooth. If using, fold in the chopped nuts at this stage.

    Cover the bowl with plastic wrap and refrigerate the ganache for about 1-2 hours, or until it is firm enough to scoop.

    Once the ganache is firm, use a small cookie scoop or your hands to form the ganache into small balls, about 1 inch in diameter.
