Remove the filet mignon from the refrigerator and allow it to reach room temperature (about 30 minutes). Preheat your grill or skillet over high heat.

Pat the filet dry with paper towels. Season generously with salt and black pepper on both sides.
Cooking

Cook the Filet Mignon
Sear the filet mignon for 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Use a meat thermometer to check for an internal temperature of 130°F (54°C) for medium-rare.

Remove the filet from the heat and let it rest for 5-10 minutes to allow juices to redistribute.
