Soup Preparation

    Prepare the Vegetables

    Peel and chop the sweet potatoes and yams into small cubes. Chop the onion and mince the garlic.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.

    Cook the Soup

    Add the sweet potatoes and yams to the pot, stirring to combine. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 20 minutes or until the sweet potatoes and yams are tender.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer it to a blender in batches.

    Add Coconut Milk

    Stir in the coconut milk and season with salt and black pepper. Heat through for another 5 minutes.

    Serve with Garnish

    Ladle the soup into bowls, drizzle with herb oil and chili oil to taste, and top with baby chervil and gaufrette potato chips.
