For the Strawberry-Lemon Tart
Method
Instructions
- 1
Make the Tart Crust
In a mixing bowl, combine the flour, butter, granulated sugar, and salt. Mix until crumbly. Press the mixture into a 9-inch tart pan and refrigerate for 30 minutes.
- 2
Pre-bake the Crust
Preheat the oven to 350°F (175°C). Bake the tart crust for 15 minutes or until lightly golden. Remove from oven and let it cool.
- 3
Prepare the Filling
In a bowl, whisk together the lemon juice, lemon zest, and eggs until well combined. Slowly add in the granulated sugar and mix until dissolved.
- 4
Bake the Tart
Pour the lemon filling into the cooled tart crust. Bake for an additional 20-25 minutes, or until the filling is set. Remove from oven and let it cool completely.
- 5
Make the Whipped Cream
In a mixing bowl, whip the heavy cream with powdered sugar until stiff peaks form.
- 6
Assemble the Tart
Once the tart is cool, top with whipped cream, meringue cookies, and strawberry pearls. Serve chilled.
