Foraged Mushrooms

Method

Preparation and Roasting

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (400°F).

  2. 2

    Prepare the Mushrooms

Clean the foraged mushrooms gently with a damp cloth or brush to remove any dirt. Slice larger mushrooms into smaller pieces for even cooking.

  3. 3

    Season the Mushrooms

In a large bowl, combine the cleaned mushrooms with olive oil, minced garlic, fresh thyme, sea salt, and black pepper. Toss until all mushrooms are well coated.

  4. 4

    Roast the Mushrooms

Spread the seasoned mushrooms in a single layer on a baking sheet. Roast in the preheated oven for about 20-25 minutes, or until they are golden brown and tender.

  5. 5

    Finish with Lemon and Parsley

Remove the mushrooms from the oven and drizzle with fresh lemon juice. Sprinkle chopped parsley on top for garnish. Serve warm.
