    Prepare the Bacon & Onion Jam

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove the bacon and chop it into small pieces, leaving the drippings in the skillet.

    Cook the Onions

    Add the chopped onion to the skillet and sauté in the bacon drippings until caramelized, about 10 minutes.

    Make the Jam

    Stir in the brown sugar, apple cider vinegar, and thyme. Cook for an additional 5-7 minutes until the mixture thickens and becomes jam-like. Stir in the bacon pieces and season with salt and black pepper to taste. Set aside.

    Prepare the Steak

    Season the dry-aged New York strip steaks with salt and black pepper on both sides.

    Cook the Steak

    Heat a grill or skillet over high heat. Cook the steaks for 4-5 minutes per side for medium-rare, adjusting the time for desired doneness.

    Serve

    Plate the steak and top with the applewood smoked bacon and onion jam. Serve with a drizzle of red wine reduction if desired.
