    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Drain and set aside.

    Prepare the Mushrooms and Spinach

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the foraged mushrooms and sauté until they are golden brown, about 5-7 minutes. Add the Bloomsdale spinach and confit garlic, cooking until the spinach wilts, about 2-3 minutes. Season with salt and pepper.

    Make the Parsley-Tahini Sauce

    In a small bowl, whisk together tahini, lemon juice, chopped parsley, and 1 tablespoon of water until smooth. Adjust the consistency with more water if needed, and season with salt and pepper.

    Combine and Serve

    Add the cooked gnocchi to the skillet with the mushrooms and spinach. Toss gently to combine. Drizzle with the parsley-tahini sauce and the remaining olive oil. Serve immediately.
