Soufflé Ingredients

Method

Preparation Instructions

  1. 1

    Prepare the Soufflé Base

Preheat your oven to 375°F (190°C). Grease four ramekins with unsalted butter and dust with granulated sugar. Set aside. Melt the dark chocolate in a double boiler or microwave until smooth. Allow it to cool slightly. In a large bowl, whisk together the egg yolks, Grand Marnier, and the seeds from the vanilla bean until well combined. Stir in the melted chocolate until smooth.

  2. 2

    Whip the Egg Whites

In a separate bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining granulated sugar and continue beating until stiff peaks form.

  3. 3

    Combine Mixtures

Gently fold one-third of the whipped egg whites into the chocolate mixture to lighten it. Then, carefully fold in the remaining egg whites until no white streaks remain.

  4. 4

    Bake the Soufflés

Pour the soufflé mixture into the prepared ramekins, filling them about 3/4 full. Place the ramekins on a baking sheet and bake in the preheated oven for 20 minutes or until the soufflés have risen and are set on the outside but still slightly soft in the center.

  5. 5

    Serve

Remove from the oven and serve immediately, accompanied by dark chocolate sauce and white chocolate anglaise.
