Preparation Steps

    Prepare the Gelatin

    In a small bowl, sprinkle gelatin over water and let it bloom for 5 minutes. Then, gently heat until dissolved.

    Make the Coffee Mousse

    In a medium bowl, whisk heavy cream, instant coffee granules, and sugar until soft peaks form. Fold in the dissolved gelatin mixture until well combined.

    Combine with White Chocolate

    Melt the white chocolate in a microwave or double boiler until smooth. Allow it to cool slightly, then fold it into the coffee mousse mixture until fully incorporated.

    Set the Mousse

    Pour the mousse into serving molds or glasses and chill in the refrigerator for at least 4 hours or until set.

    Prepare the Glaze

    Once the mousse is set, melt additional white chocolate and pour over the top of the mousse to create a glaze.

    Finish and Serve

    Dust with cocoa powder and garnish with chocolate coffee beans before serving.
