Make the Churros
In a saucepan, combine the water, butter, and a pinch of salt. Bring to a boil, then add the flour and stir until a dough forms.

Remove from heat and let cool slightly. Stir in the egg and vanilla until smooth.

Heat oil in a deep fryer or large pan. Pipe strips of dough into the hot oil and fry until golden brown. Remove and drain on paper towels.

Mix the granulated sugar and cinnamon in a bowl. Roll the churros in the cinnamon sugar mixture while they're still warm.
