    Prepare the Filling

    In a large skillet, heat olive oil over medium heat. Add the diced applewood-smoked bacon and cook until crispy. Remove and set aside, leaving the drippings in the pan.

    Sauté Vegetables

    In the same skillet, add the diced onions, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes. Add minced garlic and thyme, cooking for another minute.

    Combine Ingredients

    Add the braised chicken, crispy bacon, English peas, and heavy cream to the skillet. Season with salt and black pepper. Stir until well combined and heated through.

    Assemble the Pot Pie

    Preheat the oven to 400°F (200°C). Transfer the filling into a baking dish. Roll out the puff pastry sheets and cover the filling, sealing the edges. Cut slits in the pastry to allow steam to escape.

    Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and flaky. Let cool for a few minutes before serving.
