Season both sides of the sirloin steaks generously with coarse black pepper and salt. Let them sit at room temperature for about 30 minutes.

In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare, adjusting cooking time for desired doneness. Remove steaks from skillet and set aside to rest.

In the same skillet, add the remaining tablespoon of butter. Once melted, add the brandy and carefully ignite to flambé (optional). Allow the flames to subside, then stir in the beef broth and scrape up any browned bits from the pan.
