Prepare the Fruit
In a large saucepan, combine the diced apples and pears.

Cook the Compote
Bring the mixture to a boil over medium heat. Reduce the heat and let it simmer for about 15-20 minutes, or until the fruit is soft and the mixture has thickened.

Cool and Serve
Remove from heat and let the compote cool. Serve warm or chilled in phyllo cups topped with Laura Chenel chèvre goat cheese, prosciutto dust, and chives.
