    Prepare the Spice Rub

    In a small bowl, mix together 2 tsp of sumac, salt, pepper, and any other preferred spices to create a rub for the lamb chops.

    Rub the Lamb Chops

    Generously rub the spice mixture onto the lamb chops, ensuring they are well coated. Let them marinate for at least 30 minutes.

    Roast the Potatoes

    Preheat the oven to 400°F (200°C). Chop the potatoes into bite-sized pieces, toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes or until golden brown.

    Cook the Kale and Onions

    In a skillet over medium heat, add olive oil and sauté onions until translucent. Add kale and cook until wilted, about 5 minutes. Season with salt and pepper.

    Cook the Lamb Chops

    In a separate skillet, heat olive oil over medium-high heat. Sear the lamb chops for 3-4 minutes on each side for medium-rare doneness.

    Prepare the Shallot Crunch

    Finely slice shallots and fry them in oil until crispy. Drain on paper towels.

    On a plate, serve the roasted potatoes, kale, and onions with the lamb chops on top. Drizzle with black garlic BBQ sauce and zhug. Finish with crispy shallots and a sprinkle of sumac.
