Cook the Salmon
Preheat the oven to 400°F (200°C). Place the marinated salmon on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Make Tzatziki
In a bowl, combine the grated cucumber, yogurt, chopped parsley, salt, and pepper. Mix well and let it sit in the refrigerator for at least 10 minutes to blend the flavors.

Roasted Pepper Sauce
In a blender, combine roasted red peppers with olive oil, salt, and pepper. Blend until smooth.

Serve
On a plate, serve the baked salmon topped with zhug, alongside the chana masala, tzatziki, and roasted pepper sauce. Sprinkle with sumac for an extra zing.
