Method

Preparation

  1. 1

    Prepare the Oak Chips

Soak the oak chips in warm water for at least 30 minutes to allow them to infuse their flavor into the juice. This also helps prevent the chips from burning during the infusion.

  2. 2

    Prepare the Lemon Peels

Using a vegetable peeler, carefully peel the zest from the lemons, avoiding the bitter white pith. Set the lemon peels aside.

Infusion

  1. 3

    Combine Ingredients

In a large glass pitcher or container, pour the Sauvignon grape juice. Add the soaked oak chips and the lemon peels into the juice.

  2. 4

    Add Sugar and Water

Dissolve the sugar in 100 ml of warm water, then add this mixture to the pitcher with the grape juice, oak chips, and lemon peels.

  3. 5

    Infuse the Mixture

Cover the pitcher with a lid or plastic wrap and let it sit in the refrigerator for at least 4 hours, or overnight for a more intense flavor.

Serving

  1. 6

    Strain and Serve

Once infused, strain the mixture through a fine mesh sieve or cheesecloth into another container to remove the oak chips and lemon peels. Serve chilled over ice, garnished with fresh lemon slices if desired.
