Method

Base Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  3. 3

    Combine Wet Ingredients

In another bowl, beat the eggs and then add the milk, vegetable oil, and vanilla extract. Mix until smooth.

  4. 4

    Combine Mixtures

Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined (do not overmix).

  5. 5

    Bake the Base

Pour the batter into a greased 9-inch round cake pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

  6. 6

    Cool the Base

Once baked, remove from the oven and let the cake cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

Topping Preparation

  1. 7

    Prepare Cream Cheese Mixture

In a mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and continue mixing until well combined.

  2. 8

    Whip the Cream

In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined.

  3. 9

    Prepare Strawberries

Wash the strawberries, hull them, and slice them into halves or quarters depending on their size.

  4. 10

    Assemble the Top Seat

Once the cake base has cooled, spread the cream cheese mixture evenly over the top. Arrange the sliced strawberries on top, and garnish with fresh mint leaves.
