Method

Preparation

  1. 1

    Prepare the Seafood

Rinse the scallops, shrimp, and fish fillet under cold water. Pat dry with paper towels. Season the seafood with salt and black pepper.

  2. 2

    Chop the Vegetables

Finely chop the shallots, and mince the garlic. Halve the cherry tomatoes. Set all the vegetables aside.

Cooking

  1. 3

    Sauté the Aromatics

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallots. Sauté until they are translucent, about 2-3 minutes.

  2. 4

    Add the Seafood

Add the scallops, shrimp, and fish fillet to the skillet. Cook for 2-3 minutes on each side until they are slightly browned.

  3. 5

    Introduce the Mussels

Add the cleaned mussels to the skillet, followed by the white wine and fish stock. Cover the skillet and let it simmer for 5 minutes, or until the mussels open.

  4. 6

    Add the Vegetables

Once the mussels are open, add the halved cherry tomatoes and fresh spinach. Stir gently and cook for an additional 2-3 minutes until the spinach wilts.

  5. 7

    Finish with Lemon and Garnish

Remove from heat and stir in lemon juice and chopped parsley. Adjust seasoning with additional salt and pepper if necessary.

Serving

  1. 8

    Plate the Dish

Serve the seafood and vegetable mixture in shallow bowls, ensuring to include an ample amount of broth for dipping crusty bread.

  2. 9

    Garnish and Enjoy

Garnish with extra parsley if desired, and serve immediately while hot.
