Prepare the Seafood
Rinse the salmon fillets, shrimp, mussels, and calamari under cold water. Pat them dry with a paper towel.

Chop the garlic, halve the cherry tomatoes, slice the red bell pepper, and clean the spinach.
Cooking

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then, add the red bell pepper and cook for another 2 minutes.

Add the Spinach and Tomatoes
Stir in the fresh spinach and cherry tomatoes. Cook until the spinach wilts and the tomatoes soften, about 3-4 minutes.

Cook the Seafood
Add the salmon fillets to the skillet, followed by the shrimp, mussels, and calamari. Pour in the white wine and lemon juice, and season with salt and black pepper to taste.

Simmer
Cover the skillet and allow the seafood to steam in the white wine sauce for about 8-10 minutes, or until the mussels open and the shrimp turns pink.

Finish and Serve
Once cooked, remove from heat. Sprinkle with chopped fresh parsley before serving. Serve immediately, drizzling with remaining olive oil if desired.
