Method

Prepare Sushi Rice

  1. 1

    Rinse the Rice

In a fine-mesh strainer, rinse the sushi rice under cold water until the water runs clear to remove excess starch.

  2. 2

    Cook the Rice

In a pot, combine rinsed sushi rice and water. Bring to a boil over medium heat, then cover and reduce to low heat. Cook for 20 minutes, or until all the water is absorbed.

  3. 3

    Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer to a large bowl and fold in the vinegar mixture gently with a spatula. Let it cool to room temperature.

Prepare Toppings

  1. 4

    Slice the Fish

Cut fresh tuna and salmon into thin, bite-sized slices.

  2. 5

    Prepare Vegetables

Slice the avocado and cucumber into thin strips.

Assemble Sushi

  1. 6

    Prepare Nori

Place a sheet of nori on a bamboo sushi mat, shiny side down.

  2. 7

    Spread Sushi Rice

Wet your hands to prevent sticking. Take about a handful of sushi rice and spread it evenly over the nori, leaving a small border at the top.

  3. 8

    Add Fillings

Layer slices of tuna, salmon, avocado, and cucumber across the center of the rice.

  4. 9

    Roll the Sushi

Using the bamboo mat, roll the sushi away from you, pressing gently but firmly to form a tight roll. Moisten the edge of the nori with a little water to seal it.

  5. 10

    Slice and Serve

With a sharp knife, slice the roll into 6-8 pieces. Repeat with remaining ingredients. Serve with soy sauce, wasabi, and pickled ginger on the side.

Garnish

  1. 11

    Garnish the Sushi

Sprinkle sesame seeds and chopped chives on top of the sushi rolls for added flavor and presentation.
