Preparation

  1. 1

    Prepare the Vegetables

Start by washing the spinach thoroughly. Then, chop the onion and garlic finely.

  2. 2

    Optional Ingredients Prep

If using, chop the tomato and slice the avocado for garnish.

Cooking

  1. 3

    Sauté the Onion and Garlic

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until the onion becomes translucent, about 3-4 minutes.

  2. 4

    Add Spinach

Add the spinach to the skillet and cook until wilted, stirring occasionally, about 2-3 minutes.

  3. 5

    Beat the Eggs

In a bowl, crack the eggs and beat them until well mixed. Season with salt and black pepper.

  4. 6

    Combine Ingredients

Pour the beaten eggs into the skillet with the spinach and onion. Gently stir to combine all ingredients and allow the eggs to set.

  5. 7

    Add Feta Cheese

Once the eggs are mostly set, sprinkle the feta cheese over the top and let it melt slightly, about 2 minutes.

Serving

    Plate the Dish

Carefully transfer the Milos to a serving plate. Top with chopped tomatoes and sliced avocado if desired.
