Preparation of Fruits

Wash the apples and pears thoroughly under running water to remove any dirt or pesticides.

Core and chop the apples and pears into small pieces, leaving the skins on for added nutrients.
Infusion of Spices

In a small saucepan, combine the coriander seeds, star anise, and 1 cup of water.

Bring the mixture to a boil over medium heat and then reduce to a simmer for 5 minutes to allow the spices to infuse.

Remove from heat and let it cool for a few minutes.
Juicing Process

In a large pot, combine the chopped apples and pears with the remaining 3 cups of water.

Pour the infused spice mixture into the pot with the fruits.

Bring the pot to a boil over medium-high heat, then reduce the heat and let it simmer for about 20-25 minutes, until the fruits are soft.

Add the lemon balm leaves during the last 5 minutes of cooking.

Once the mixture has simmered, remove it from the heat and let it cool slightly.
Straining and Serving

Using a fine mesh strainer or cheesecloth, strain the mixture into a large bowl or pitcher, pressing down on the solids to extract as much juice as possible.

Serve chilled or at room temperature. Optionally, garnish with fresh lemon balm leaves.
