    Prepare the Chicken

    Cut the chicken breast into bite-sized pieces and marinate in soy sauce, sesame oil, minced garlic, and grated ginger for at least 30 minutes.

    Prepare the Vegetables

    While the chicken marinates, slice the bell peppers, carrots, and chop the broccoli into florets. Set aside.

    Cook the Chicken

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.

    Stir-fry the Vegetables

    In the same skillet, add a little more oil if needed. Add the sliced bell peppers, broccoli, and carrots. Stir-fry for about 5 minutes until they are tender-crisp.

    Combine Chicken and Vegetables

    Return the cooked chicken to the skillet with the vegetables. Mix well.

    Make the Sauce

    In a small bowl, mix together cornstarch and water to form a slurry. Pour this over the chicken and vegetables, stirring continuously until the sauce thickens, about 2 minutes. Season with salt and black pepper to taste.

    Serve the chicken and vegetable stir-fry over a bed of steamed rice. Drizzle with chili oil and garnish with sesame seeds and lime wedges.
