Main Preparation

    Preheat the oven to 400°F (200°C). Season the beef tenderloin with sea salt and black pepper. Heat olive oil in a large cast-iron skillet over medium-high heat.

    Once the skillet is hot, sear the beef on all sides for about 2-3 minutes per side until a golden brown crust forms.

    Add Aromatics

    Add the fresh thyme, butter, and garlic cloves to the skillet. Baste the beef with the melted butter and aromatics for 2 minutes.

    Roast the Beef

    Transfer the skillet to the preheated oven and roast for 15-20 minutes for medium-rare. Use a meat thermometer to check for an internal temperature of 135°F (57°C).

    Remove the beef from the oven and let it rest for 10 minutes before slicing.
