For the Pickled Vegetables

For the Grilled Salmon

For the Herb Sauce

Method

For the Pickled Vegetables

  1. 1

    Prepare the Brine

In a saucepan, combine white vinegar, water, sugar, salt, and black peppercorns. Bring the mixture to a boil over medium heat, stirring until the sugar and salt dissolve.

  2. 2

    Slice the Vegetables

While the brine is heating, wash and slice the carrots, cucumbers, and radishes into thin rounds or sticks.

  3. 3

    Pickle the Vegetables

Once the brine is boiling, remove it from heat. Add the sliced vegetables and garlic cloves into the brine. Let it cool to room temperature, then transfer the mixture to a jar and refrigerate for at least 2 hours before serving.

For the Grilled Salmon

  1. 4

    Marinate the Salmon

In a bowl, whisk together olive oil, lemon juice, garlic powder, salt, and black pepper. Add the salmon fillets to the marinade and let them sit for 15-30 minutes to absorb the flavors.

  2. 5

    Preheat the Grill

Preheat your grill to medium-high heat.

  3. 6

    Grill the Salmon

Place the marinated salmon fillets on the grill. Grill each side for about 4-6 minutes or until the salmon is cooked through and flakes easily with a fork.

For the Herb Sauce

  1. 7

    Blend the Sauce

In a food processor, combine fresh basil, fresh parsley, garlic cloves, olive oil, lemon juice, and salt. Blend until smooth and creamy. Adjust seasoning if needed.

  2. 8

    Serve

Drizzle the herb sauce over the grilled salmon and serve alongside the pickled vegetables.
