    Prepare the Beef

    Season the beef fillet with sea salt and black pepper. Let it sit at room temperature for 30 minutes before cooking.

    Prep the Vegetables

    Wash and trim the asparagus. Peel and cut the carrots into small batons. Wash the baby potatoes and set aside.

    Make the Sauce Base

    Finely chop the shallots and set aside. In a saucepan, combine red wine, beef stock, chopped shallots, and bay leaf. Bring to a boil and let simmer for about 15 minutes.

Cooking

    Cook the Beef

    In a skillet, heat olive oil over medium-high heat. Sear the beef fillet for 3-4 minutes on each side until browned. Add butter and thyme sprigs, basting the beef for 2 more minutes.

    Blanch the Vegetables

    In a pot of boiling salted water, blanch the asparagus and carrots for 2-3 minutes until tender. Remove and plunge them into ice water to stop cooking.

    Cook Baby Potatoes

    In the same pot, add baby potatoes and cook for 15-20 minutes until fork-tender. Drain and set aside.

    Finish the Sauce

    Remove the bay leaf from the sauce mixture and whisk in cornstarch to thicken. Simmer for 5 more minutes until it reaches desired consistency.

Plating

    Slice the beef fillet and arrange it on a plate. Add the blanched vegetables and baby potatoes on the side. Drizzle the red wine sauce over the beef and serve immediately.
