Cooking the Beef

    Prepare the Beef Fillet

    Take the beef fillet out of the refrigerator and allow it to come to room temperature. Season generously with salt and pepper.

    Sear the Beef

    Heat the olive oil in a skillet over high heat. Once hot, add the beef fillet and sear it for about 3-4 minutes on each side for medium-rare.

    Add Butter and Aromatics

    Add the butter, garlic, and thyme to the skillet. Baste the beef with the melted butter for an additional 2 minutes.

    Rest the Beef

    Remove the beef from the skillet and let it rest for at least 10 minutes before slicing.

Preparing the Cauliflower Purée

    Cook the Cauliflower

    Chop the cauliflower into florets and place them in a pot. Add the milk and vegetable stock, and bring to a boil. Simmer for 15 minutes until tender.

    Transfer the cauliflower mixture to a blender and add the Parmesan cheese. Blend until smooth. Season to taste with salt and pepper.

Plating the Dish

    Slice the rested beef fillet into medallions.

    Spoon a generous amount of cauliflower purée onto each plate.
