Preparation

    Prepare the Ginger and Honey Syrup

    If you don't have ginger and honey syrup on hand, you can quickly make it by combining equal parts honey and water in a saucepan. Add freshly grated ginger (about 1 tablespoon) and heat gently until the honey dissolves. Let it steep for 30 minutes, then strain and cool.

    Juicing the Lime

    Juice the lime to obtain approximately 0.75 oz of fresh lime juice. Strain to remove any pulp or seeds if desired.

Mixing

    Combine Ingredients

    In a cocktail shaker filled with ice, combine 2 oz of Macallan 12 Years Sherry Cask, 1 oz of Manzanilla Sherry, 0.5 oz of ginger and honey syrup, and 0.75 oz of fresh lime juice.

    Shake the Mixture

    Shake the cocktail shaker vigorously for about 15-20 seconds until well-chilled.

Serving

    Strain and Serve

    Strain the mixture into a chilled coupe or cocktail glass.

    Garnish

    Garnish with a fresh lime wheel on the rim of the glass and sprinkle a teaspoon of grated ginger on top for added flavor and presentation.
