Preparing the Shrub Base

    Clementine Preparation

    Peel the clementines and remove any seeds. Save peels and juice separately.

    Infusing the Vinegar

    In a large jar, combine the clementine juice, apple cider vinegar, honey, chopped hazelnuts, thyme, ground ginger, and the cinnamon stick. Stir well to combine.

    Maceration

    Seal the jar tightly and let it sit in a cool, dark place for about 3-5 days. Shake the jar gently once a day to mix the ingredients.

Straining and Serving

    Strain the Mixture

    After the infusion period, strain the mixture through a fine mesh strainer or cheesecloth into a clean jar to separate the liquid from the solids.

    Mixing the Drink

    In a glass, combine 1 part of the shrub base with 2 parts ginger ale and top with soda water. Adjust the ratios according to taste.

    Serve

    Fill a glass with ice cubes, pour the mixture over the ice, and garnish with a sprig of thyme or a slice of clementine if desired.
