Method

Preparation of Base

  1. 1

    Prepare Pita Bread

Preheat your oven to 375°F (190°C). Brush the pita bread with olive oil and sprinkle sea salt evenly over each piece. Place them on a baking sheet.

  2. 2

    Bake the Pita

Bake the pita bread in the preheated oven for about 8-10 minutes or until they are crisp and lightly golden. Remove from the oven and let cool slightly.

Preparation of Toppings

  1. 3

    Cook the Chicken

Grill the chicken breasts over medium heat for about 6-7 minutes on each side or until fully cooked. Once cooked, let them rest for a few minutes before slicing them into strips.

  2. 4

    Chop Vegetables

Dice the cucumber, chop the tomatoes, and thinly slice the red onion. Set aside in separate bowls.

  3. 5

    Prepare Other Toppings

Crumbled the feta cheese and chop the fresh parsley. Place them in serving bowls along with the Kalamata olives.

Preparation of Dressing

  1. 6

    Make the Dressing

In a bowl, combine Greek yogurt, lemon juice, minced garlic, cumin, and black pepper. Mix well until smooth and creamy.

Assembling the Dish

  1. 7

    Assemble the Casablanca Beach Club

On each piece of baked pita, spread a generous layer of hummus. Top with sliced grilled chicken, diced cucumber, chopped tomatoes, sliced red onion, crumbled feta cheese, Kalamata olives, and fresh parsley. Drizzle with the prepared dressing.

  2. 8

    Serve

Cut the assembled pita into quarters and serve immediately, garnished with extra parsley if desired.
