Prepare the Burrata
Place the fresh burrata cheese in the center of a large plate.

Slice the Tomatoes
Cut the heirloom tomatoes into thick slices and arrange them around the burrata.

Add Herbs
Tuck basil leaves in between the tomato slices for freshness.

Drizzle and Season
Drizzle balsamic reduction and extra virgin olive oil over the dish, and season with sea salt and black pepper to taste.

Prepare the Quinoa
Rinse the quinoa under cold water. Cook 200g of quinoa according to package instructions, typically in double the volume of water for about 15 minutes.

Plate the Dish
On each plate, create a bed of quinoa, add grilled salmon on top, and arrange sautéed asparagus on the side.

Melt the Chocolate
In a heatproof bowl, melt dark chocolate over a pot of simmering water, stirring until smooth.

Make the Chocolate Mousse
In a separate bowl, whisk coconut cream until fluffy. Gradually fold in melted chocolate and honey until well combined.

Chill the Mousse
Spoon the mixture into serving cups and refrigerate for at least 1 hour to set.

Top the chilled mousse with fresh raspberries and mint leaves before serving.
